
So I was a little stuck for writing today as I’m just starting a new book and our meals for the past couple of nights have been quick and basic so nothing really worth sharing!
The one thing in my life which keeps me sane and in my happy place is coffee. Now whether it is full-caf, decaf, fresh pressed or brewed, I love the smell and taste of this beauty.
This morning however, I was torn I wanted a hot chocolate but like hell am I starting my day without my happy juice so I decided to mix the two. Now I’m probably late to the party on this one but it is to die for!
I added a little chocolate milk to the bottom of my ello thermos then added a teaspoon of hot chocolate powder and as I like it sweet one teaspoon of stevia. Once my coffee had finished from the keurig, I added it to the mix and gave it a really good stir and it tastes like Christmas and winter!
Now I love most things coffee. Coffee cake, coffee cookies and just plain coffee but I do not like coffee chocolates that you can buy, I think they are awful!
A few years ago I asked my mum what cake she wanted for her birthday from my Mary Berry recipe book and she chose the “Hokey Pokey Coffee Cake” and to this day it remains my favorite bake. It’s a rich coffee flavored sponge with coffee icing and walnut praline in the centre and on top. The one reason I haven’t made this since I moved is I haven’t been able to find self raising flour! I could be looking in the wrong places im sure it’s somewhere but English baking recipes always use self-raising flour, unless you are making certain things then it is plain flour. In canada all I can find is all purpose flour. I have tried to make my own self raising flour but it didn’t end well and the cake was very dense.
If you love to bake and can find the time to search for the recipe I am sure it is on the internet some where seriously find the recipe and make it!
