Apple Crisp Coincidences

Coincidences are one of those funny things in life. The first dessert my husband ever made me was Apple Crisp, of course being a Brit I had nooo idea what this was. Once it was made I realised it was a bougie apple crumble, which I love in any form. So I guess the other part is where 3 years ago today my hubby asked me to marry him at Niagara Falls.

Imagine my suprise today when my husband calls to ask “can you make the apple crisp tonight”? We had been saving the imperfect apples for a couple of weeks, in my opinion this is when they taste better in baking. So I of course oblige the good wife that I am.

Well imagine my suprise when midway through baking, the kitchen smelling like cinnamon and sweetness, I got the phone call I had been waiting two years for, my Permenant Residency for Canada was approved! Coincidence, I think not. So in honour of my very wierd day I am sharing the recipe for that apple crisp which seemed to bring me luck today, I cannot take all the credit as it is an online recipe that we use but I do add my own spin so see below for the details:

Ingredients:

4 Apples, Peeled, Cored and Sliced (it does say Granny Smith but I use whatever I have)

3/4 Cup packed brown sugar

1/2 Cup Flour

1/2 Cup rolled oats

3/4 teaspoon Cinnamon

3/4 teaspoon nutmeg (or pumpkin spice seasoning)

1/3 Cup butter softened

1 teaspoon vanilla essence

1 tablespoon white sugar

1 tablespoon brown sugar

Directions:

Put apples in a 8 or 9 inch square baking dish. Mix in the vanilla, the white sugar and the tablespoon of brown sugar. I

In a seperate bowl combine all other ingredients, then sprinkle over the top of the apples and bake in a 375 degree oven for 35 minutes.

Yes it is that simple, and this time of year provides christmas comfort!
