
So this had to be one of the things I miss from England, it is my mum’s recipe and honestly being able to make it when I miss her brings me so much comfort!
I think this was one of the first things I ever learnt to cook from my mum, this was a cheap, filling meal when we were growing up as I have two sister’s it was definitely able to feed us for a couple of days!
Now I was very torn in sharing this recipe as it is so close to my heart, but hey if it can make someone else’s life a little easier to feed their family for cheap then that makes me happy!
Ingredients:
1-2 packages of either beef or pork Mince (if you don’t eat red meat you can make it with turkey Mince too)
1 onion diced finely
2 carrots diced (optional)
1 cup of frozen peas (optional)
6-8 potatoes peeled and cubed
Half a small bottle of HP Sauce
4 sachets of beef oxo
2 tablespoons of worcestershire sauce
1 tablespoon of beef Bisto granules
2 table spoons of butter
3 tablespoons milk
Directions:
In a pan brown the beef, once half cooked add the onion, carrots and peas and continue to brown once cooked add to a glass baking dish
Whilst you are browning the beef, boil your potatoes until soft. Once soft drain and add back into the pot.
Add the butter and mash until all lumps have disappeared, add the milk and use a spatula to mix until smooth. You can add seasoning to your mash, even adding some garlic powder and rosemary if your feeling special but I will leave that to preference.
Add the oxo, bisto, worcestershire sauce, and HP Sauce to the beef mixture and stir, it should turn into a deep brown colour. Smooth the mixture so it is flat.
Add the mash ontop of the beef mixture and spread so it covers the entire mixture. You should have a smooth layer of potatoes.
Preheat your oven to 400° and add the baking dish, cook for 30 minutes or until the top is starting to turn golden brown.
Now this last step I don’t do very often but if you are feeling luxurious once you have cooked the shepherds pie for 30 minutes remove from the oven and add a layer of cheese, any cheddar or Parmesan work, place back into the oven until golden, remove and serve!
